These Grilled Chicken and Vegetable Skewers are a healthy and flavorful option for a summer cookout or quick weeknight dinner. The tangy lemon herb marinade enhances the flavors of the chicken and vegetables.

Ingredients
2 chicken breasts (cut into chunks)
1 red bell pepper (cut into chunks)
1 zucchini (cut into rounds)
1 red onion (cut into chunks)
1/4 cup olive oil
2 tbsp lemon juice
1 tbsp fresh parsley (chopped)
Salt and pepper to taste
Preparation
In a bowl, whisk together olive oil, lemon juice, parsley, salt, and pepper.
Thread chicken and vegetables onto skewers and brush with the marinade.
Preheat grill to medium-high heat. Grill skewers for 8-10 minutes, turning occasionally until the chicken is cooked through.
Serve with your choice of dipping sauce.
