This Mediterranean Quinoa Salad is a healthy and refreshing dish perfect for lunch or dinner. Quinoa is mixed with fresh vegetables, feta cheese, and a tangy lemon vinaigrette for a flavorful and nutritious meal.

Ingredients
1 cup quinoa
2 cups water
1 cup cherry tomatoes, halved
1 cucumber, diced
½ red onion, finely chopped
1 bell pepper, diced
½ cup Kalamata olives, sliced
½ cup feta cheese, crumbled
Fresh parsley for garnish
Lemon Vinaigrette:
¼ cup olive oil
2 tbsp fresh lemon juice
1 tsp Dijon mustard
1 tsp honey
Salt and pepper to taste
Preparation
Rinse quinoa under cold water. In a medium saucepan, combine quinoa and water and bring to a boil. Reduce heat, cover, and simmer for 15 minutes, or until water is absorbed and quinoa is tender. Fluff with a fork and let cool.
In a large bowl, combine cooled quinoa, cherry tomatoes, cucumber, red onion, bell pepper, olives, and feta cheese.
In a small bowl, whisk together olive oil, lemon juice, Dijon mustard, honey, salt, and pepper.
Pour the vinaigrette over the salad and toss to combine.
Garnish with fresh parsley and serve immediately, or refrigerate until ready to eat.
