About the Recipe
A healthy and protein-packed Quinoa and Black Bean Salad, perfect for lunch or as a side dish. It's refreshing, colorful, and full of flavor.

Ingredients
1 cup quinoa (rinsed)
1 can black beans (drained and rinsed)
1 red bell pepper (diced)
1 small red onion (diced)
1 avocado (diced)
1/4 cup cilantro (chopped)
Juice of 2 limes
2 tbsp olive oil
Salt and pepper to taste
Preparation
Cook quinoa according to package instructions. Let cool.
In a large bowl, combine quinoa, black beans, bell pepper, onion, avocado, and cilantro.
In a small bowl, whisk lime juice, olive oil, salt, and pepper. Pour over the salad and toss to combine.
