About the Recipe

A healthy and protein-packed Quinoa and Black Bean Salad, perfect for lunch or as a side dish. It's refreshing, colorful, and full of flavor.

Ingredients

  • 1 cup quinoa (rinsed)

  • 1 can black beans (drained and rinsed)

  • 1 red bell pepper (diced)

  • 1 small red onion (diced)

  • 1 avocado (diced)

  • 1/4 cup cilantro (chopped)

  • Juice of 2 limes

  • 2 tbsp olive oil

  • Salt and pepper to taste

Preparation

  • Cook quinoa according to package instructions. Let cool.

  • In a large bowl, combine quinoa, black beans, bell pepper, onion, avocado, and cilantro.

  • In a small bowl, whisk lime juice, olive oil, salt, and pepper. Pour over the salad and toss to combine.
