About the Recipe
This Sweet Potato and Kale Skillet is a quick, easy, and healthy meal. It's packed with vitamins, fiber, and antioxidants, making it perfect for a nutritious dinner.

Ingredients
2 large sweet potatoes (peeled and diced)
4 cups kale (chopped, stems removed)
1 onion (diced)
2 cloves garlic (minced)
1 tsp smoked paprika
2 tbsp olive oil
Salt and pepper to taste
Preparation
Heat olive oil in a large skillet over medium heat. Add diced onions and garlic, sautéing until softened.
Add the sweet potatoes and smoked paprika. Cook, stirring occasionally, for about 10 minutes until the sweet potatoes are tender.
Add kale to the skillet and cook for an additional 5 minutes until wilted. Season with salt and pepper.
Serve warm as a main dish or a side.
