About the Recipe

Beetroot Hummus is a vibrant and nutritious dip that incorporates beet pulp from your Beet-all juice. It’s a creative way to use leftover pulp, adding earthy flavors and stunning color to the classic hummus.

Ingredients

  • 1 cup beet pulp from Beet-all juice

  • 1 can (15 oz) chickpeas, drained and rinsed

  • 2 tbsp tahini

  • 2 cloves garlic

  • Juice of 1 lemon

  • Salt and pepper to taste

  • Olive oil for drizzling

Preparation

  1. In a food processor, combine the beet pulp, chickpeas, tahini, garlic, and lemon juice.

  2. Process until smooth, adding a little water if needed.

  3. Season with salt and pepper to taste.

  4. Serve drizzled with olive oil and enjoy with crackers or vegetable sticks.
