Beetroot Hummus is a vibrant and nutritious dip that incorporates beet pulp from your Beet-all juice. It’s a creative way to use leftover pulp, adding earthy flavors and stunning color to the classic hummus.

Ingredients
1 cup beet pulp from Beet-all juice
1 can (15 oz) chickpeas, drained and rinsed
2 tbsp tahini
2 cloves garlic
Juice of 1 lemon
Salt and pepper to taste
Olive oil for drizzling
Preparation
In a food processor, combine the beet pulp, chickpeas, tahini, garlic, and lemon juice.
Process until smooth, adding a little water if needed.
Season with salt and pepper to taste.
Serve drizzled with olive oil and enjoy with crackers or vegetable sticks.
