Coconut Curry Lentils are a comforting and flavorful dish that’s both vegan and gluten-free. The combination of lentils and coconut milk creates a creamy texture that’s perfect over rice or with naan bread.

Ingredients
1 cup dried lentils (rinsed)
1 can coconut milk
1 onion (diced)
3 cloves garlic (minced)
1 tbsp curry powder
1 tsp turmeric
1/2 tsp cumin
2 cups vegetable broth
2 tbsp olive oil
Salt and pepper to taste
Preparation
In a large pot, heat olive oil over medium heat. Add onion and garlic, sautéing until softened.
Stir in curry powder, turmeric, and cumin. Cook for 1 minute until fragrant.
Add lentils, coconut milk, and vegetable broth. Bring to a boil, then reduce heat and simmer for 25-30 minutes until lentils are tender.
Season with salt and pepper. Serve over rice or with naan.
